Sourdough Banana Bread Muffins
Use your overripe bananas!

Another amazing way to use leftover sourdough discard, and overripe bananas!
Ingredients
- 240 g Ripe Bananas
- 50 g Granulated Sugar
- 100 g Brown Sugar
- 113 g Melted Butter (1 Stick)
- 1 Large Egg
- 1 tsp Vanilla
- 120 g Room Temperature Sourdough Discard
- 185 g All Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 80 g Chocolate Chips
Instructions
- Mash bananas in a large bowl until mushy.
- Add sugars, butter, egg, vanilla, and discard into the bowl.
- Whisk until combined
- Sift in flour, add baking soda, salt, and cinnamon.
- Gently fold until combined.
- Add in chocolate chips and combine.
- Preheat oven to 350 Degrees fahrenheit
- Line cupcake tin with foil wrappers and add dough. (Makes 12 muffins.)
- Bake for 20 minutes.
Notes
- You can do different inclusions like nuts if you don't like chocolate.
- You could also bake into a loaf, I'd imagine there is a longer baking time. Not sure.
